Classic cream tea

A taste of summer – what could be more civilised than afternoon tea with scones, strawberry jam and lashings of clotted cream?

Ingredients

Green tea ice cream

  • 600 ml (1 pt) milk
  • vanilla pod, split in half and seeds scraped out
  • 50 g (2 oz) fresh green tea leaves
  • 7 egg yolks
  • 250 g (9 oz) caster sugar
  • 750 ml (1¼ pt) double cream.

Honey glazed figs

  • 25 g (1 oz) butter
  • 2 tablespoons (30 ml or 1 fl oz) honey
  • 3 figs, cut in half.

  • Ice cream maker

Method

Green tea ice cream

  1. Heat the milk in a pan with the vanilla pod and green tea leaves.
  2. Beat the egg yolks and caster sugar together in a mixing bowl until pale and fluffy.
  3. Strain the hot milk mixture through a sieve onto the eggs and whisk together.
  4. Return it to the pan and cook gently until the mixture coats the back of a spoon, then add the double cream. Allow the mixture to cool. Transfer the mixture to an ice-cream machine and churn it.
  5. Place the ice cream in a suitable container and freeze until required.
  6. Serve with cones or honey glazed figs. 

Honey glazed figs

  1. Heat a pan on the stove and melt the butter and honey.
  2. Place the figs in the pan and cook for a few mins until golden.
  3. Serve with your ice cream.
