Ingredients
Green tea ice cream
- 600 ml (1 pt) milk
- vanilla pod, split in half and seeds scraped out
- 50 g (2 oz) fresh green tea leaves
- 7 egg yolks
- 250 g (9 oz) caster sugar
- 750 ml (1¼ pt) double cream.
Honey glazed figs
- 25 g (1 oz) butter
- 2 tablespoons (30 ml or 1 fl oz) honey
- 3 figs, cut in half.

Method
Green tea ice cream
- Heat the milk in a pan with the vanilla pod and green tea leaves.
- Beat the egg yolks and caster sugar together in a mixing bowl until pale and fluffy.
- Strain the hot milk mixture through a sieve onto the eggs and whisk together.
- Return it to the pan and cook gently until the mixture coats the back of a spoon, then add the double cream. Allow the mixture to cool. Transfer the mixture to an ice-cream machine and churn it.
- Place the ice cream in a suitable container and freeze until required.
- Serve with cones or honey glazed figs.
Honey glazed figs
- Heat a pan on the stove and melt the butter and honey.
- Place the figs in the pan and cook for a few mins until golden.
- Serve with your ice cream.
